LOS ANGELES — Fried chimichangas are getting a makeover at Mrs. Chimi. Owner Maria Hernandez perfected a whipped cream cheese filling for her new type of dessert.
“I like things that are unique, different things I haven’t seen before,” said Hernandez.
Her husband and business partner Robert loves cheesecake, so she got creative saying, “Our strawberry cheesecake was our original. This is where we started.”
But Mrs. Chimi is just as unassuming as the dessert itself. Hernandez made these for her husband to bring to work on the construction site at Sofi Stadium and they were a hit!
“We made max 24 in a house pan you know, so I mean that’s pretty much where we come from,” said Hernandez.
Then, months later his coworkers asked for more.
“I really didn’t think too much about it. They were just trying to be nice. He came back the second time and he was like, ‘No, they are asking again if they can order some.’ So, I was like, ‘It’s your coworker he asked twice, so let’s just get it going.’ The first time around the orders came out to 95,” said Hernandez.
Hernandez is a veteran and worked long days and hours as a social worker for years. So, when she finally took a step back, it came at the perfect time to focus on her new chimi business full time. She had to then buy more fryers, a tent, tables and then with her family’s help, she came up with the catchy name and logo.
“Chimi and then changa in Spanish is monkey. So, he’s like, ‘Mrs. Chimi then a monkey with the shirt with Mrs. Chimi on it.’ So, we were like, `Oh, Mrs. Chimi, like chimichanga,'” laughed Hernandez.
Before she knew it, she was partnering with other businesses and popping up at events. Now, serving more than 15 flavors, cinnamon fries and Nutella bombs all from the same simple ingredients.
Hernandez puts in long hours and so does her husband who now is working on construction projects at LAX, then comes home to help his wife with Mrs. Chimi. They put everything they have into these cheesecake filled, cinnamon sugar-rolled tortillas. Hernandez even wears them right on her ears.
“I never expected to be here. To be doing what we are doing,” said Hernandez.
