SHEBOYGAN COUNTY, Wis. (SPECTRUM NEWS) -- Maple syrup production season is officially underway here in Wisconsin. It comes as demand for the product appears to be increasing. 

Wisconsin is the 4th largest maple syrup producing state in the country. According the USDA, in 2019 the state produced 270,000 gallons of syrup. It is an increase of nearly 45,000 gallons compared to 2018. 

At Drewry Farms Maple Products in Plymouth, producers say the season is off to a pretty good start as weather conditions have proved favorable. 

“We are probably a week early compared to other years, we need freezing nights and warm days, sunshine helps a lot. We can have a day where maybe its only 30 or 32 degrees out but a lot of sunshine.” Says Barbara Dreary-Zimmerman of Drewry Farms 

Staff at Drewry Farms says they have seen an increased demand for syrup in recent years as more people nationwide look to buy local and place in increased emphasis on know where the food they buy comes from.
