EASTHAMPTON, Mass. - He’s been in the restaurant industry since he was 13, and now Kevin Sahagian is creating his own identity as a restaurant owner and entrepreneur, cooking up everything from tacos to sandwiches at his roadside shack in Easthampton.

“I wanted to do a concept that was really tasty, fast food that you could just pull up to,” Sahagian, owner of Captain Jack’s Roadside Shack, said. “You know, there’s no freezers here. Everything is from scratch as you saw in there and, you know, work with some young folks and hang out with the community.”

Sahagian started the business in 2011.

Now he is making plans to expand his reach to Chicopee where he is hoping to host food trucks, including his own, and local entertainment in Chicopee center.

Sahagian took Spectrum News 1 on a tour of where he hopes to host the new concept on Thursday afternoon.

“These are the old Captain Jack’s tables that we brought here,” said Sahagian. “So we’re going to have that, as well as the tables from the original site.”

Sahagian has managed a food truck in the past and knows expanding his business can be a huge risk, but he’s confident this is something residents in Chicopee want and will enjoy.

“We know how to run the truck, so it’s no mystery to us, so at least that aspect will go pretty smooth,” said Sahagian. “And you met the crew. They all know what they’re doing and take a few of those guys and a few new people and sling it.”

Sahagian said he hopes to have his Chicopee concept open by mid-summer.
