FLORENCE, Ky. — Northern Kentucky University (NKU) students are learning to pursue entrepreneurship and give back to the community. Two students took their love for baking to raise money for FUEL NKU, an on-campus grocery store program helping students with food insecurity and toiletries.

Sophomores Kristen Douglas and Madison Pendleton joined forces, baking all night long. They're both pursing degrees in entrepreneurship.

Douglas' dream is to take over her family’s business, Scoops N Such Ice Cream in Bullitt County. Both said they're learning essential marketing skills so they can succeed with their future endeavors. 

“It is about resources ... as well as who I need to make a business successful and as well as opportunities," Pendleton said. 

As part of a class project, the students were given $10 and had to put together a business that would raise money for a good cause. Douglas and Pendleton said they knew they wanted to help students on their campus right away.

"FUEL NKU’s mission is giving college students free groceries, including produce and really anything you can imagine is there," Douglas said.

However, they needed somewhere to set up shop. That’s where NKU senior and assistant store manager of Clothes Mentor in Florence, Brel Alsip, came to the rescue.
