LOUISVILLE, Ky. — Gallant Fox Brewing Company co-founder, Roger Huff is on a mission to make good beer with sustainable methods, while also helping native plant species. 

“For us, one of the big things about Bernheim is their commitment to Kentucky, their commitment to Kentucky agriculture, their commitment to Kentucky sustainability,” Huff said.

These qualities align with Gallant Fox’s values. 

“If you look around Gallant Fox, you’ll see a very outdoor theme. We’re very connected with nature, we’re very connected with Kentucky. We make Kentucky beers, we make Kentucky bourbon, we’re two Kentucky boys,” Huff said.  

The brewery and taproom, which opened its first location in the spring of 2020, captures the carbon emitted and reuses it in the fermentation process. 

“Instead of off-gassing the CO2 into the atmosphere like a lot of breweries do, we’re able to use the spent CO2 instead of having to push CO2 in to carbonate that beer,” Huff said.  

The inaugural beer, Wonderland and Mint, is a combination of Gallant Fox’s and Bernheim Forest’s sustainability practices. 

While the brewery is helping to limit CO2 emissions, Bernheim is expanding their green thumbprint. 

“Bernheim has a long served tradition of using native plants in sustainable landscapes. So we don’t have irrigation, we don’t use chemicals and yet you can see, we’re successful in growing really wonderful plants that support pollinators and habitat,” Rennee Frith, the director of horticulture and sustainable landscapes, said. 

Mountain mint, which is in Wonderland and Mint, is regenerative, meaning after it is cut down, it will grow back in a couple of weeks. The beer also contains lemon balm. 

This is the first of a series of “Bernheim Brews” the partnership plans to release. 

“That’s the whole idea of the game, so we still have food on the table for our pollinators and we have enough mint to use in great beer with Gallant Fox,” Frith says. 

For each beer sold, a portion of the sales will go back to Bernheim. 

“So being able to give back to something like Bernheim, which really values the beauty of Kentucky, for us, it’s a perfect partnership and we’re really delighted to be their official brewery partner and be the one brewery in Kentucky that’s able to put those beers out and partner with them,” Huff said.  

The Bernheim Brews series is available at Gallant Fox locations for a limited time.
