LOUISVILLE, Ky. — As many restaurants re-implement mask mandates, one Louisville owner is going above and beyond to keep his staff and customers safe and healthy.

In order to dine inside at CC’s Low Carb Kitchen, you'll have to abide by their new policy: show proof of COVID-19 vaccination.​

  • CC’s Low Carb Kitchen is now requiring proof of vaccination to dine indoors

  • If you're not vaccinated or can’t show proof, you can submit a negative COVID test from the last 48 hours

  • Exceptions will be made for children under 12, and unvaccinated patrons can still dine outdoors

  • All staff members at CC’s Low Carb Kitchen are fully vaccinated

Proof can be a picture of your vaccination card. If you haven't been vaccinated, you can provide documentation of a negative COVID-19 test result. The test must be administered within 48 hours of your visit.

“I don't want to know why they can't get a vaccination. If they didn't get a vaccination, they can also submit a negative COVID test. So as long as they have tested negative in the last 48 hours then they will also be allowed to dine indoors,” Corey Milliman, owner of CC’s Low Carb Kitchen said.

After seeing cases of the delta variant rise, Milliman took to Facebook to announce the change. Receiving more than 400 comments both for and against the COVID-19 policy.

"Thank you! I feel safer knowing this for our upcoming visit," one comment read.

Others were not so happy with the announcement, with some comparing the policy to segregation. "Sorry to see you're on your way out of business," another read.

Given his past experience with the virus, Milliman said he's standing by his decision.

“I had COVID, I was diagnosed in February and I'm still dealing with long COVID. So I still have tons of symptoms that we can't get our hands around,” Milliman said.

Unvaccinated customers are still welcome to dine outdoors and children under the age of 12 may dine-in with parents or legal guardians, as long as all members of the party can prove vaccination status or a negative COVID-19 test.

“I see somebody bringing in their grandmother or grandfather and I see a lot of people that are at higher risk, it's kind of unnerving to think that they could be sitting next to somebody else who could hurt them inadvertently,” Milliman said.

As a restaurant owner, Milliman feels as though it's his duty to keep his customers safe and  healthy.

“So people are trusting us not only with their families, with their events, their birthdays, their anniversaries, all of this stuff, they're also trusting us with a lot more. so we can't wait for a government entity to say you must do this, something I'm sure will come but in the meantime this is what we felt we had to do,” Milliman said.

Proof of vaccination at CC’s Low Carb Kitchen will go into effect starting Wednesday, August 11. All staff members at CC’s Low Carb Kitchen are fully vaccinated.

CC’s is currently working on ticketing and reservation systems to accommodate this requirement, so customers can text or email proof of vaccination prior to your visit.
