BOWLING GREEN, Ky. — While many restaurants have struggled to keep doors open during the pandemic, Simply Ramen in Bowling Green is actually looking to expand. 

Opening their doors for the first time May 22, Co-owner Rob Sparkman says the support from the community has been overflowing and overwhelming.

“Its been a blessing you know, we’re one of the stores that’s opening instead of closing, so its a blessing, and we have a lot of local support coming out, so we’ve been very supported,” said Sparkman. 

The restaurant has only been allowed to seat 33 percent of their capacity due to the pandemic. Dine-in and curbside pick-up has given the owners the confidence to expand.

With consumership up and a new mandate from Gov. Andy Beshear to keep capacity at 25 percent, Sparkman says this is the perfect time to expand the restaurant to include outside dining.

“Thats why we are in a hurry to get the patio done so we can hold almost the same amount of people that’s supporting us, so they can still enjoy their Ramen,” said Sparkman. 

You can grab a bite at Simply Ramen on Old Morgantown Rd. They're open Tuesday through Saturday, 11 a.m. to 8 p.m. and Sunday, 12 p.m. to 6 p.m.
