COVINA, Calif. — James Jin and Emiko Tanabe have gone all in on Sake.

The husband and wife team are the owners of Nova Brewing in Covina, where they brew sake using ancient hand-methods they learned from the pros in Japan, where Jin and Tanabe say it’s becoming a lost art.

The pair wanted to keep those traditions alive, and say LA was a natural city to start a sake company because the city has the second largest Japanese population in the country.
