LOS ANGELES — Los Angeles is known for the breakfast burrito. Every restaurant creates their own spin on the classic, and Lowkey Burritos is known for popping up around SoCal, serving unique burritos that bring long lines and wait times.

The mastermind behind the cheese-crust creations, Matt Stevanus, has perfected breakfast burritos that are anything but low key.

Stevanus hoped to be the low key one, never wanting to be the face of his business. He yearned for success, but never thought his street-style service would turn into a phenomenon like this.

“I didn’t want to have me be involved in it whatsoever. I wanted everyone to focus on the food,” said Stevanus.

Whether Stevanus likes it or not, the focus is also on his story. It starts like many others: a struggling cook who needed to do more to support his growing family. Stevanus then bought a cooktop and started popping up on street corners around L.A. to sell his favorite dish.

“What am I going to do with my life? I need to make more than minimum wage,” said Stevanus.

It quickly grew from there. His signature crust and the unique locations started to attract long lines and even longer wait times. Lowkey Burritos was a success, even if Stevanus is too modest to admit it.

“I am really grateful for all the support people have given me,” he said.

Support comes from local diners, as well as visitors from around the country and world, all wanting to try his egg, cheese, potato, and salsa-stuffed tortillas. Everything is made in house, with quality remaining Stevanus' top priority regardless of how big his operation gets.

“We have people peeling potatoes for so many hours of their life, and we will never stop that,” he said.

This remains especially true as Stevanus moves into not one, but two permanent locations. The first is right behind his Koreatown stand and the other in Long Beach. This will help the business owner keep up with demand, but Stevanus promises to always make sure the finished product lives up to expectations with texture, salt, and salsa being the most important.

“I want them to see what they see on the Instagram, what they get all excited for, what they plan their day for. I want them to feel that their time is worth it,” said Stevanus.
